Riley Phinisi Food & Dining: A Private Chef at Sea

Dining on Riley Phinisi is full board and included in the private charter rate — USD 3,350 per night in 2026, USD 3,800 in 2027 for the whole boat (4 cabins, up to 10 guests). A dedicated chef cooks three Indonesian and Western meals daily, served alfresco on deck between stops at Padar, Pink Beach, and Manta Point.
Plenty of Komodo charter pages promise “gourmet meals” and leave it there. This review of the Riley Phinisi food and dining experience goes further: what full board actually covers, what the chef cooks on a typical three-day route, how halal, vegetarian, and allergy requests are handled, and where on the 29-meter deck you eat it all. Riley Phinisi is operated by Komodo Luxury, and the rates and boat facts below match the official 2026–2027 rate sheet.
What Full Board Actually Covers
Every Riley Phinisi charter is sold per boat, not per plate. The nightly rate — USD 3,350 in 2026, rising to USD 3,800 in 2027 — includes the chef, three cooked meals a day, afternoon snacks, fresh fruit, drinking water, coffee, tea, and juice for up to 10 guests. There is no onboard bar bill for the basics and no surcharge for a fourth helping of nasi goreng.
The provisioning behind that matters on a multi-day trip: refrigeration on board runs day and night, so fish bought in Labuan Bajo on day one is still properly chilled at dinner on day three. Alcohol is the one category not included; guests usually bring their own bottles or arrange wine and beer in advance through the booking team. The full inclusion list sits on our charter services page.
The Menu: Indonesian Kitchen, Western Breakfast
The galley leans Indonesian because that is what the crew cooks best. Expect grilled reef fish with sambal matah, beef rendang, sate lilit, gado-gado, mie goreng, and urap vegetables, with rice at almost every sitting. Fish is the anchor of the menu: provisioning happens at the Labuan Bajo market the morning of departure, so the catch on your plate was landed hours before you boarded.
Breakfast runs Western by default — eggs to order, pancakes or toast, fruit platters of papaya, pineapple, and watermelon, plus proper coffee before the Padar climb. Lunches and dinners alternate between the two kitchens: pasta or grilled chicken one meal, a full Indonesian spread the next. On a 3D2N charter the chef typically stages one barbecue night on deck, usually timed for the calm anchorage after the Komodo or Rinca ranger walk. Families with young children can ask for plainer plates — steamed rice, grilled fish without chili, simple soups — with no advance notice needed.
Halal, Vegetarian, Vegan, and Allergy Requests
The kitchen handles the requests that matter most in this region without drama. A fully halal menu is available on request and is the simplest adjustment the galley makes — most of the standard Indonesian repertoire already qualifies. Vegetarian and vegan menus are built around tempeh, tofu, urap, sayur asem, and the same market-fresh vegetables the rest of the boat eats, not an afterthought of plain rice.
Allergies need one extra step. Riley has a single galley, so guests with severe allergies — peanut, shellfish, gluten — should flag them at booking rather than at boarding. Send the details via WhatsApp when you book so the provisioning list is written around them; peanut sauce and shrimp paste are staples of Indonesian cooking, and the chef substitutes both cleanly when told in time. Common dietary questions are answered on the FAQ page, and anything unusual can be confirmed in writing before you pay the deposit.
Where You Eat: The Alfresco Deck
Riley Phinisi was built in 2020 by the shipwrights of Bulukumba, South Sulawesi, and the 29-meter hull leaves genuine space for a dedicated outdoor dining area — not a folding table wedged beside the wheelhouse. Dinner is served at anchor, most memorably off Kalong Island, where thousands of flying foxes leave the mangroves at dusk while the first course lands on the table.
The layout rewards lingering. The jacuzzi and sun lounge sit steps from the dining table, so the pattern of a Riley evening is fixed quickly: snorkel rinse, jacuzzi, dinner, and coffee under a sky with no light pollution. In the dry season, April through October, seas inside the park are calm enough that every meal of a charter can be taken outside. In the January–February wet months the crew moves service under cover when squalls pass through — the itinerary logic behind that is covered in the Riley cruise overview.
How Meals Fit a Charter Day
Food on Riley is scheduled around the park, not the other way round. A typical middle day runs like this: coffee and biscuits at 5:30, tender to the Padar trailhead for the sunrise hike, then the full cooked breakfast back on board around 8:30 while the boat repositions to Pink Beach. Lunch follows the late-morning swim, usually grilled fish and two or three Indonesian sides. The afternoon snack — fried banana, fresh fruit, coffee — appears after the Manta Point drift or the sandbar stop at Taka Makassar, and dinner is called around 19:00 once the anchor is down.
Because the charter is private, none of this is fixed. Ten friends who would rather push dinner to 20:30 after a night swim can; a family with toddlers can bring lunch forward an hour. The chef adjusts to the group, which is the practical difference between Riley and a shared liveaboard running one timetable for thirty strangers.
The Verdict, and How to Book
Judged as a dining experience, Riley Phinisi delivers where it counts: market-fresh Indonesian food cooked well, honest Western breakfasts, serious flexibility on halal and dietary needs, and a deck setting that no restaurant in Labuan Bajo can match. It is not fine dining with wine pairings — it is a very good private kitchen at sea, included in the boat price, and for most groups of up to 10 that is exactly the right trade.
